Tragopogon pratensis
Tragopogon pratensis, also known as meadow salsify or Jack-go-to-bed-at-noon, is a biennial plant. It grows up to 76 cm (30 in) tall with lanceolate, keeled, grey-green leaves that are hairless and have a white midrib. The flower heads are yellow and measure 15–25 millimetres (5⁄8–1 in) wide, blooming between June and October. The plant features a long-beaked pappus resembling a 'blowball' with fine white side hairs.

Like other members of the Asteraceae family, Tragopogon pratensis contains a milky latex. The plant is rich in essential nutrients and antioxidants, including polyphenols and flavonoids.
The roots can be boiled and eaten like potatoes, while the fresh stems and buds can be cooked like asparagus. The young leaves are edible raw.
