A perennial flowering plant known as curly dock, curled dock, or yellow dock. It grows to a height of up to 1.5 meters and has smooth, waved or curled leaves that grow from a large basal rosette. The plant produces flowers and seeds in clusters on branched stems, with the largest cluster at the apex. Seeds are shiny, brown, and encased in a calyx that helps in their dispersal. The root structure is a large, yellow, forking taproot. It has several subspecies with distinctive habitat preferences.

Chemistry:

Contains high levels of oxalic acid, which gives the leaves a tart flavor. Also contains anthraquinone glycosides, which can have laxative effects in some individuals. Rich in vitamins A and C, as well as iron and potassium.

Uses:

Used as a wild leaf vegetable; young leaves should be boiled to remove oxalic acid. Leaves and seeds are edible but should be consumed in moderation due to potential health risks. The root is used in Western herbalism for treating anemia and other conditions. It is also part of the homeopathic pharmacopoeia for respiratory conditions.
