Anthriscus sylvestris, commonly known as cow parsley or wild chervil, is a herbaceous biennial or short-lived perennial plant. It grows to a height of 60–170 cm with hollow, striated stems that are green with flushes of purple. The leaves are triangular, 2–3 pinnate, and fern-like in appearance. The flowers are arranged in compound umbels with white petals, and the plant produces tiny hairs on stems and leaves.

Uses:

All above-ground parts of the cow parsley plant are edible, with a flavor sharper than garden chervil. However, it is suspected of being mildly toxic and is often strongly discouraged for foraging due to the risk of confusion with poisonous look-alikes such as hemlock and fool's parsley.
