Chervil is a delicate annual herb related to parsley. It grows to about 40–70 cm (16–28 in) tall with tripinnate leaves and small white flowers that form umbels. The fruit is oblong-ovoid with a slender, ridged beak.

The essential oil of chervil contains methyl chavicol (83.10%), 1-allyl-2,4-dimethoxybenzene (15.15%), undecane (1.75%), and β-pinene (<0.01%).

Uses:

Chervil is used in culinary applications, particularly in France, to season poultry, seafood, young spring vegetables, soups, and sauces. It is part of the French herb mixture fines herbes. It has also been used in folk medicine as a digestive aid, for lowering high blood pressure, and for curing hiccups. However, it can cause phytophotodermatitis due to spray from weed trimmers.
