Anise seeds contain essential oils, with anethole being the primary component (80-90%), along with minor components such as 4-anisaldehyde, estragole, and pseudoisoeugenyl-2-methylbutyrates. The seeds also contain moisture (9-13%), protein (18%), fatty oil (8-23%), starch (5%), N-free extract (22-28%), and crude fiber (12-25%).
Anise is used for its sweet and aromatic flavor in various culinary applications, including teas, tisanes, confectioneries like black jelly beans and aniseed balls, and alcoholic drinks such as ouzo, sambuca, and pastis. It has traditional medicinal uses for reducing flatulence, freshening breath, and as a remedy for sleeplessness. In some cultures, it is used as an appetite stimulant and diuretic.
