German Chamomile, also known as Matricaria chamomilla, is an annual plant native to southern and eastern Europe. It has a branched, erect stem that grows to a height of 15-60 cm. The leaves are long and narrow, bipinnate or tripinnate. The flowers bloom in early to midsummer and are fragrant, with white ray florets and yellow disc florets. The plant is known for its characteristic apple-like scent due to the essential oil in its flowers, which contains chamazulene and gives the oil a blue color. The fruit is a yellowish-brown achene.

The essential oil of the flowers contains bisabolol, farnesene, chamazulene, apigenin, quercetin, patuletin, luteolin, and coumarin. The oil can account for up to 33% of the oil's content with bisabolol. Over 120 chemical constituents have been identified in chamomile flower.
German Chamomile is commonly used to make herbal tea. It is also used in herbal medicine for its various medicinal properties, including anti-inflammatory and antioxidant effects. The plant is known to treat cramps and sleep disorders related to premenstrual syndrome, as well as potential drug interactions with anticoagulants. The plant is also used to treat allergies.
