Lovage
Lovage is a tall perennial herbaceous plant growing to 1.8–2.5 meters (6-8 feet) tall, with a basal rosette of leaves and stems. The plant has shiny green to yellow-green foliage with a celery-like scent when crushed. Its stems are erect, and the leaves are tripinnate with broad triangular to rhomboidal leaflets. The flowers are yellow to greenish-yellow, produced in globose umbels at the top of the stems, and bloom in late spring. The fruit is a dry two-parted schizocarp mature in autumn.

Lovage leaves are used in salads, soups, and broths. The roots can be eaten as a vegetable or grated for salads. Seeds are used as a spice similar to fennel seeds. It is traditionally used to season various broths and added to pickled vegetables for preservation and flavor. Lovage root extract is used in hair conditioners to strengthen the hair.
