Sour Cherry

The sour cherry tree, also known as the tart cherry or dwarf cherry, is a smaller species of Prunus in the subgenus Cerasus. It grows to a height of 4–10 meters with twiggy branches and crimson-to-near-black cherries borne upon shorter stalks. It is closely related to the sweet cherry (Prunus avium) but has a more acidic fruit. The tree has two main groups of cultivars: the dark-red Morello cherry and the lighter-red Amarelle cherry.

Uses:

Sour cherries are used in culinary applications such as soups, pork dishes, cakes, tarts, and pies. They are also used to make jams and fruit spreads. In some cultures, they are used in liqueurs and drinks like vișinată (Romanian) and ginjinha (Portuguese). Sour cherries are also used in traditional medicines for their anti-inflammatory properties. Additionally, they are a key ingredient in the production of kriek lambic, a cherry-flavored variety of naturally fermented beer made in Belgium.
