Quince
Quince is a deciduous tree known for its hard, aromatic, bright golden-yellow pome fruit. The tree grows up to 4-6 meters tall and 3-4.5 meters wide, with oval leaves that are downy on the underside. The flowers are white or pink and appear in late spring after the leaves. The fruit is hard, tart, and astringent when ripe, often pear-shaped but sometimes spherical. It contains gritty stone cells dispersed through the flesh and seeds that are toxic if eaten in large quantities due to the presence of nitriles, which can produce hydrogen cyanide.

Quince fruit contains nitriles in its seeds, which can be hydrolyzed to produce toxic hydrogen cyanide. The fruit is high in pectin and anthocyanins, which give it a red color when cooked with sugar.
